Healthy Sugar-Free Banana Cake
Like me do you hate throwing away food? Want to use up those really ripe bananas? This recipe is super simple, sugar free and healthy, and children seem to love it!
Pre-heat the oven to 180 degrees celsius. Grease a bread tin -spray sunflower oil works really well for this.
4 over-ripe bananas, mashed
1 large egg
1 tablespoon almond milk
1 teaspoon vanilla essence
75g Wholemeal Flour
75g Self-raising white flour
1 teaspoon baking powder
2 teaspoons cinnamon
Put all the dry ingredients into a bow and mix. Separately mix the egg, milk and butter, then add the bananas and mix. Blend the wet and dry ingredients, mix well and pour it into the tin. Bake for 45 minutes. Remove from the oven and leave in the tin to cool.
Mix together approximately half a 250g tub of Quark fat-free spoonable cheese; and the same amount of 0% fat Greek yoghurt, with a drizzle of maple syrup or agave syrup. Pop this into the fridge while the cake is baking and cooling.
When the cake is baked and cooled, carefully take it out of the tin, using a knife to make sure it comes away from the edges, and putting a large plate or board on top of it to make sure it doesn't flop out and break!
Using the back of a serving spoon, spread the frosting over the top.
Now it's ready to enjoy and relatively guilt-free!
