Squid and Prawns in a rich, smooth Tomato, Garlic and Chili Sauce
THIS IS SUCH AN EASY DISH TO PREPARE!
Ingredients:
150g shelled, deveined raw large prawns (frozen is fine)
150g squid, including the tentacles (Trust me - they have such a great flavour!) - Chop the squid into good-sized chunks as they will reduce in size by at least half during the cooking process
About 3 cloves of garlic finely chopped. TIP: You can use frozen garlic - some of the supermarkets supply it and I find it amazing for a busy family.
One carton of passata
A tablespoonful of red pesto
A decent lug of extra virgin olive oil
A good squeeze of chili paste (one of my time-saving cheats!)
Method:
Heat the oil and put the chopped garlic into a large frying pan, frying on a medium heat - be careful not to burn the garlic - for less than a minute. Then pop in the squid and prawns and toss for less than a minute. Add the passata and chili paste and turn the heat right down to a low simmer for about 7 minutes.
Serve with basmati rice - we used half and half brown and white to make it more healthy. NOTE: Using some brown grains will increase cooking time by at least 5 minutes overall.
